TASTE

A sweet, gentle floral aroma with a refreshing citrus-like quality.

 Following a smooth, soft mouthfeel, a rich, rice-derived sweetness gently unfolds.

This is followed by a fresh, crisp acidity that fills the palate, whilst a subtle citrus-like bitterness provides a clean, crisp finish.

CHARACTER

It is characterised by a colour reminiscent of cherry blossoms.
This hue is derived from ‘anthocyanin’ (a type of polyphenol), a natural pigment found in rice. It makes the most of the natural colour of the rice.

Furthermore, white koji, traditionally used in shochu production, has been employed to create a charming acidity.
Rich in citric acid—a compound also found in abundance in citrus fruits—this blends with the gentle sweetness of the rice to produce a fruity, sweet-and-sour flavour with a refreshing finish.
