We utilized white koji, commonly used in shochu production, to emphasize the acidity. This sake has a gentle effervescence rich in citric acid found abundantly in citrus fruits. It's fruity and slightly tangy, with a lower alcohol content, offering a refreshing and easy-to-drink characteristic.
